Thanks to culinary experimentar Aga van Lengen and highly reliable chief-cook Gislene Aparecida, the food varies with each workshop held in TIBA. Without exaggeration one can say that it is served in all shapes and colors (though blue might be missing). But above all it is plenty of pleasure with delicious food, that keeps you in a good mood, strong and focused during the workshop. The dishes are mainly vegetarian, to a part also ovo-lacto-vegeterian.

Mushroom risottos, quich with taioba, aloo gobi, gyros tzaziki, salads with green mamao, guacamole, Thai curry with chu-chu, tagliatelle with banana navel, various homemade marmalades from local fruits and the Brazilian classics. The next workshop might shine with yet another part of that unique culinary spectre. Especially when it is time for..

..an encounter with professor Valdely Kinupp, researcher and popularizer of unconventional edible plants. Author of the PANC compendium book, collecting 351 plants completely neglected as source of alimentation and culinary innovation. Kinupp´s studies indicate over 10 thousand of PANCs solely in Brazil, and 50 thousand are assumed to be found worldwide. The PANC workshop in TIBA is a revelation of that potential - where over the stretch of a few meters, Kinupp identifies dozens of these plants, while delivering most surprising experiences to the tastebuds of his students.
